Today, Google lauched a new Google Labs service dedicated to give users a better IMAP Gmail user experience.
For iPhone users not wishing to use MobileSafari to access their Gmail, this new service now lets you decide which labels on the folder list, allowing a less cluttered interface.

Just go on Settings on your Gmail account and play with the tool.
